Ingredients for avocado and cucumber salad recipe:
- 250g of soft feta cheese in garlic
- 2 avocado
- 1 lemon
- 1 cucumber
- Dill, small handful
- Black pepper and salt
- Olive oil
How to cook this
Peel the avocado and chop cucumber, dill and avocado into small pieces. Place in a bowl and grate half of the lemon zest over the ingredients, then cut the lemon in half and squeeze juice of 1 lemon in the salad bowl. Drizzle a little bit of olive oil in as well. Chop the feta in small pieces and add in the salad bowl, grind some black pepper and add a pinch of salt. Mix everything together till some of the feta has mixed with the lemon juice and olive oil, forming a bit of coating on cucumber and avocado.
Usually cheese counters where you can order what cheese you want, have this soft feta cheese in marinade. Otherwise you need to find soft and creamy feta cheese and then marinade in olive oil and garlic by yourself. Or skip the marinade and just add 1 garlic clove in to the salad, use a grater with small blades and then chop with a knife, to get the garlic into really tiny pieces.
This salad goes really well with any type of barbecue food.
