Ingredients for cajun chicken recipe:
- 4 chicken breasts
- 2 teaspoons of cajun seasoning
- 1 teaspoon of black pepper
- 1/2 teaspoon of caraway seeds
- Olive oil
How to cook this
Mix the spices in a morter till they get powdery. Rub the spice mixture on chicken and drizzle a little oil on the breasts, use hands to coat them with oil. Let marinade for 1 hour.
Add salt on the chicken just before you start cooking them and put oven on for 225°C. Add olive oil and butter on a frying pan and add chicken once pan is hot enough, don’t keep it at the hottest. When you turn the chicken, spoon some grease from the pan over the chicken, so they don’t get dry. Keep spooning till the other side is cooked also. Fry for 2-3 minutes a side till golden brown and chicken is cooked from the outside to a golden brown color. Then in oven safe dish put the chicken in the heated oven, just to finish cooking it through. Leave in the oven for 3-4 minutes.
Serve with a side salad or with rice and sauce of your choice. You can also shred the chicken and use it in a wrap.
