Ingredients for grilled salmon recipe with dill pesto:
- 2 Salmon fillets
- 1 teaspoons of dijon mustard
- 2 table spoons of olive oil
- 1 lemon
- Dill, a handful
- 1 garlic clove
- Black pepper and 1 teaspoon of green pepper
How to cook this
To make the pesto you need a mortar. Grind garlic, green pepper, dill, zest from half a lemon into a paste, add olive oil and mix, add dijon mustard and mix. Take a kitchen towel and tap the fish dry, then brush the pesto on both salmon fillets. Grind some black pepper on top and leave to marinade for 45 minutes.
For a best result, you should cook them over a barbecue. When cooking over a bbq, make sure you have skin on the fillets. This will make it so much easier. You don’t need to turn the fish as the skin will protect the fish from burning and you can cook it through from 1 side. No fish fillets breaking apart on the griddle when you do it like this. It takes about 15-18 minutes to cook the fillets through when not turning them.
If you cook it in the oven, 20 minutes at 200°C
Wipe the tray with olive oil so the salmon won’t get stuck on the tray in the oven. In the oven you get a better result when the fillets don’t have a skin on. If you cook in the oven, ask the skin to be removed when buying the fillets.
