Ingredients for long beans recipe with bacon and hazelnuts:
- 200g of bacon
- Handful of cherry tomatoes
- 2 big handfuls of long beens
- 10 mozzarella balls (or 2 bigger balls)(or use buffalo mozzarella))
- 1 spring onion
- Olive oil
- Balsamic vingar
- Parsley and basil
- Black pepper and salt
How to cook this
Cut the tomatoes in half and drizzle olive oil and balsamic vinegar on top of them. Add pepper, thinly sliced onion and coarsely chopped parsley and basil. Salt to taste. Mix well.
Fry bacon in a pan and after bacon is done, add long been with little water and cover with lid, let them steam for a 1-2 minutes, until softened. Keep frying without the lid till the beens have gotten a little bit of color. Take aside and toast the hazelnuts, you can crumble them a bit before adding on the pan.
Mix beans with the tomatoes and add chopped bacon on top and tear in some mozzarella, decorate with some leftover chopped herbs.
