Ingredients for Mackerel recipe with tomato sauce:
- 6 Mackerel fillets
- 1.5 teaspoons of black pepper
- 1.5 teaspoons of fresh thyme
- 1 leek
- 2 garlic cloves
- Handful of spinach
- Handful of parsley
- Lemon zest from half a lemon
- Juice from half a lemon
- 2 cans of chopped tomatoes
How to cook this
Grind pepper over the fish fillets and sprinkle chopped thyme on top. Drizzle little bit of olive oil on the fish and leave to marinade for 2 hours in the fridge.
Just when you fry the fillets, add a bit of salt. Get the pan hot and fry the fillets in olive oil and butter for just 30 seconds a side. Take fillets aside, cover with foil or put somewhere to keep warm.
Proceed with making the sauce in the same pan as you cooked the fish in, don’t clean the pan. Start softening the leeks in olive oil and butter, on low heat. Once leaks are starting to soften, add garlic and black pepper. Increase the heat a little, fry for 1-2 minutes and add spinach and some parsley, fry for 1 more minute before adding chopped tomatoes from a can. Let the tomatoes boil for 10 minutes, stirring occasionally. Add black pepper and salt to taste.
Take the sauce of the heat and mix in lemon zest, lemon juice and rest of the parsley. Sink mackerel fillets in the sauce and let it stand for couple minutes.
This can be served with pasta or rice. This has a lovely taste and mackerels are very nutritious with omega-3 fatty acids.
