Meatloaf with Spinach & Goat cheese

Ingredients for meatloaf recipe with spinach and goat cheese:

  • 900g ground beef
  • 1 egg
  • 1/4 cup of olive oil
  • 1 large onion
  • 2 garlic cloves
  • 1 teaspoon of chili flakes, meat seasoning and paprila (1 teaspoon each)
  • 1 tablespoon of black pepper
  • 1/2 tablespoon of thyme
  • Goat cheese
  • Fresh spinach

How to cook this

Use mortar to mix all the spices together, till it’s all powdery. Mix all ingredients in a large bowl with your hands till ground meat is starting to feel like a paste.
Keep squeezing and pounding till you get there.

Put a tiny pit of oil on a frying pan and toss the spinach in, keep mixing continuously so the spinach doesn’t burn. You only want to soften them a little.

Leave small piece of meat to use as hats for both ends of the meatloaf. Spread rest of the meat mix on a big sheet of foil, spread it far enough so that you can roll it once you’ve added spinach and goat cheese in one end, then roll it tightly using the foil underneath. Place the hats in both ends and give it a few pinces around the edges so the hat gets attached  to rest of the meatloaf.

Lift on a baking tray using the foil and put in the oven for 1 hour at 175°C

Keep covered for first 30 minutes, then another 30 minutes without cover. If you want, you can spoon some of the grease from bottom of the tray every 15 minutes over the loaf, to make it bit juicier.

Serve with mashed, roasted or with potato wedges and with a sauce of your choice. Maybe add side salad for some healthy bits 😛
