Ingredients for summer pasta recipe:

- 1 cup of broccoli cut in florets
- Handful of sliced zuchini
- 2 garlic cloves
- Chopped parsley
- Juice of 1 lemon
- Pine nuts
- Feta cheese
- Tagliatelle pasta
- Black pepper
- Cherry tomatoes (optional)
How to cook this
Start boiling water and add few tagliatelle pastas when it’s boiling, add salt and boil till it’s al dente, taste it couple times so it doesn’t go over. While the pasta is boiling. In a wok pan, steam broccoli for 1 minute by adding a splash of water on the pan and covering with lid. Then add zucchini and fry till it has bit of color, then add nuts, garlic and parsley and fry for 1-2 more minutes while tossing everything around in the wok pan. You can also add half cut cherry tomatoes on the wok for last 2 minutes. Just to heat the tomatoes and release some of the flavors on the other ingredients. Cherry tomatoes are optional for this summer pasta recipe, this dish has a great flavor even without the tomatoes.
When pasta is done, save some of the water and pour tiny amount on the wok pan, take wok pan of the heat and squeeze in lemon juice also, mix in pasta and serve with feta cheese crumbled on top. Drizzle olive oil and grind some black pepper over as well. Finish with parmesan grated over the pasta.
This has a very bright and fresh taste, pairs well with white wine 🙂
