Lentil Soup

Ingredients for lentil soup recipe:

Pureed lentil soup with garlic croutons and goat cheese
  • 1 onion
  • 1 carrot
  • 3 garlic cloves
  • 2-4 bay leaves
  • 2 stock cubes or stock jars (or use real stock instead of the added water)
  • 1 cup of mixed lentils (about 200g)
  • 1 teaspoon of mixed spice
  • 2 teaspoons of mild curry
  • 15 cubs of water
  • Chopped parsley
  • Coconut oil

How to cook this

Sweat the finely chopped onions and carrot in coconut oil on low heat till soft and onions are translucent, add garlic and mix in stock cubes/jars and add mixed spice, curry and bayleaves. Add in lentils and water and leave it to boil for 30-40 minutes till the lentils are cooked to your liking. Add parsley at the very end. You can add a splash of coconut milk for smoother flavor.

If you want a silky soft texture, run the soup through a blender. Serve with croutons.
